Cacao Chia Pudding

This highly flavored pudding is made with chia seeds (which thicken as they absorb the liquid), cashews, and cocoa powder.

If the dates are hard, soak them in boiling water for an hour, then drain before chopping.

The pudding should be chilled for 2 hours before serving and can be kept refrigerated for up to 3 days.

In a food processor or high-powder blender (such as a Vitamix), purée the water, cashews, dates, vanilla extract, salt, cacao powder, 

and chia seeds until very smooth. Taste and add maple syrup, 1 tablespoon at a time, until the desired sweetness is achieved.

The pudding should be divided into individual cups or transferred to a big container, covered, 

and chilled for approximately two hours, or until it has cooled down and become firm.

Cacao nibs can be used as a garnish, and chocolate wafers can be served alongside (if desired).
