Double Celery Salad 

Begin by washing and trimming two bunches of celery. 

Slice the celery stalks thinly on a diagonal to create elongated pieces. 

In a large mixing bowl, combine the sliced celery with one diced red onion. 

Add in a handful of fresh parsley leaves for freshness and color. 

For a burst of sweetness, mix in half a cup of dried cranberries. 

In a separate small bowl, whisk together the dressing ingredients: 1/4 cup of olive oil, 2 tablespoons of apple cider vinegar, 1 tablespoon of Dijon mustard, salt, and pepper to taste. 

Pour the dressing over the celery mixture and toss until evenly coated. 

Let the salad sit for at least 10 minutes to allow the flavors to meld together. 

Just before serving, sprinkle the salad with toasted almond slices for added crunch.
